Dinner at the Argentinians: Bacon ravioli with basil pesto

Had a dinner party with the work girls the other week at my good friend Cece's place. Cece is from Argentina and you are almost guaranteed a fuckin good time when hanging out with her. The girls whipped up an amazing bacon ravioli with basil pesto while I drank Gin and took photos, and we all woke up to our boyfriends trying to get away from our stinky garlic breath :)

I've never made pasta before because it looks like there's a lot that can go wrong but the girls made it look easy so I'm willing to give it a try in the near future. So although there was no exact recipe involved, here's what went in.



Pasta dough
3 whole eggs, 3 cups of plain flour, teaspoon or so of salt and a few swigs of olive oil popped into a mixer with a dough hook until it forms a soft dough. Place onto floured board and knead until smooth. Roll out to 2-3mm thickness.

Filling
Finely chop an onion and sautee till soft in a frypan with some olive oil. Add finely chopped bacon and cook through. Add finely chopped sun dried tomato. Mix through cottage cheese.

Pesto
Lightly brown pine nuts in a frypan with some oil. Pop them in a food processor with lots of fresh basil, couple of cloves of garlic, olive oil and freshly grated parmesan cheese. Pulse till fine then chill in the fridge to let all the flavours mellow.

Put spoonfuls of filling onto dough and make your ravioli. Cook in salted boiling water till they float to the top. Drain and toss through your pesto, then top with lots of parmesan cheese. Well done girls-this was YUM!!
